Cauliflower Hot Wings

I love this recipe because it is fairly simply to make and tastes so good!  I got the recipe from Lindsay Nixon’s Happy Herbivore email newsletter.  She emailed out a whole bunch of Super Bowl recipes around Super Bowl Sunday, so when we were invited to a party at my brother’s I knew I had to give it a try.   Everyone loved it!  I doubled the recipe and made a whole tray and it was gone in no time.

 

Cauliflower Hot Wings

Ingredients
  • 1 head cauliflower (cut into florets)
  • 1 ½ c plain nondairy milk
  • 1 ½ c plus 1 tbsp chickpea flour
  • 3 tbsp nutritional yeast
  • 2 tbsp onion powder
  • 2 tbsp of garlic powder
  • cayenne pepper, to taste
  • 2 tbsp cashew cream or non-dairy yogurt
  • ⅔ c Frank's RedHot Original Cayenne Pepper Sauce (not the wing sauce)
Instructions
  1. Preheat oven to 450F and line a baking sheet with parchment paper.
  2. Whisk nondairy milk, flour, nutritional yeast, onion and garlic powder, and cayenne pepper to a thick pancake like batter.
  3. Dip florets into batter, and place on baking sheet. (If your cauliflower head is huge you may need to double the batter and wing sauce.)
  4. Bake for 25 minutes, until golden brown, crispy, and fork-tender inside.
  5. Meanwhile, whisk cashew cream (or yogurt) with Frank's and a few dashes of garlic powder.
  6. Toss baked florets with hot sauce mixture until coated. SERVE!

 

The recipe is also available in her Happy Herbivore Holidays & Gatherings cookbook.  I really like her cookbooks because the recipes are fairly simple with basic ingredients, but with a while lot of taste!  There hasn’t been one recipe that I didn’t like from one of her cookbooks.

A few notes about the recipe:

  • make sure you use Frank’s RedHot Original Cayenne Pepper Sauce which has minimal ingredients:  aged cayenne red peppers, distilled vinegar, water, salt, and garlic powder.  It tastes and smells so good!  The second I smelled it, my mind remembered eating hot wings in college!
  • I was unable to find plain non-dairy yogurt so I used cashew cream sauce that Anthony made with a 1/2 cup of cashews and a 1/2 cup of water in a high powered blender.
  • I like to bake the cauliflower on parchment paper to help make cleaning up easier.

  1. Love this recipe! SO easy to make and tastes so good. Especially good for people who are in the process of making the transition and might miss some of their old foods!

    1. Yes, that is correct, although you can adjust it to your preference. 2/3 of a cup of hot sauce, and 2 tablespoons of cashew cream. Enjoy!!
