About Veggies for Dinner

family_06-15-12When people find out our family eats a super healthy plant based whole food vegan diet, the first thing they usually ask is “What do you eat for dinner?”. As simple as that question is, it’s actually not very easy to answer. Mostly because we eat a huge variety of meal types ranging from simple things that we throw together to elaborate dishes that combine a variety of ingredients and flavors. All of our meals, including breakfast, lunch, dinner, snacks and desserts, are made up of almost exclusively whole unrefined plants. anthony_before_after-mid_0I gained a lot of weight over the summer between the 4th and 5th grades. I’m not sure how or why it happened, but it did, and it stuck with me well into my adult life. Over the years I tried everything I could to lose weight, with only mixed results. At age 33, weighing 360 pounds, on medication for high blood pressure, experiencing frequent migraine headaches, and unable to get a 20 year term life insurance policy, I was motivated and ready to give it another go. That’s when I found Dr. Joel Fuhrman’s book Eat to Live, and made the switch to a whole foods plant based diet consisting of almost exclusively vegetables, fruit, beans, nuts, and seeds. I quickly began to really enjoy this new way of eating, and it worked!  In less than two years I lost 160 pounds, got off all medications, stopped having headaches, and was able to get that life insurance policy!

I now have the most amazing life! I enjoy spending lots of very active quality time with my family, doing all kinds of things that would have been very difficult, if not impossible, for me when I was 10 years younger and 160 pounds heavier.  Fun stuff like snowboarding, skateboarding, running, bicycling, riding and racing motorcycles, surfing, hiking, and doing almost anything else we can get ourselves into.

Since regaining my own health I have also developed a real passion for helping others to do the same for themselves. I’ve learned a lot along my own journey and have been using that experience, along with all of the accumulated knowledge I have gained, to help many people lose weight an live happier healthier lives.

I am a wife, mother of two, marathon runner, computer programmer, healthy eater and my days are full! I started this blog with the hope of helping other busy families transition to a more healthful, plant-based way of eating, but might not know exactly how. As the primary cook in the household, I know it is not always easy to come up with quick and easy, healthy meals! I hope our tips and recipes help.

My journey towards healthy eating started at the same time my husband, Anthony, realized he needed to change his life to get his health in check. Initially, I transitioned to a plant-based diet, mostly in support of him. Little did I know that it would help me turn my health and well being around as well!

I have never had a major weight problem, but I never really felt that great, especially after eating. What I was eating was laden with fat, oils, had little nutritional value and gave me very little energy.   After getting rid of processed food, dairy and meat, and adding in tons of vegetables and fruit, I lost weight, had way more energy then ever before and went from a pasty, pale complexion to a natural, healthy color! I hope you too, can find a way to make the transition to a plant-based diet, it is well worth it!
