Lentil Sloppy Joe

November 15, 2013

This one is a REAL crowd pleaser.  You could serve this to anyone and I would expect them to like it.  It’s got that tangy flavor that I remember from so many years ago, and the texture works really well.  The kids like it, my parents like it, and my friends like it.  Give it a try for yourself and I think you will like it too!! The recipe is…

Lentil Dahl Soup

July 18, 2012

This dish is soooo easy and so delish it is a staple in our house these days. 50% of our kids like it! Okay, that is only one kid, but that is still pretty good! This started as my sister-in-law’s friend’s recipe, but we have modified it qua bit: We usually eat it over steamed or raw baby greens.  Yum! Super Food Pesto!

July 9, 2010

This pesto recipe was so good and made from healthy ingredients that it is forcing me out of my blog retirement. I usually get so much basil from my weekly farm share I don’t know what to do with it. The recipe was so easy! We had it for dinner one night over pasta and veggies and then ate it as a dip with baby carrots. We all had it…

Yum! Next time we will make it healthier and get the kit…

Red Cabbage

November 9, 2009

I am not sure how this is going to taste, but look at the colors! Steamed red cabbage, spinach, black beans and corn salsa. Not very kid friendly, but maybe if you stick it in soft taco?

Stewed Greens

October 25, 2009

Sometimes I have such a backlog of greens from the farm I just put a whole bunch in a pot with a can of diced tomatoes, some corn for sweetness and a little Italian seasoning. It comes out so good! Even Ev commented on how good it smelled while I was cooking it tonight. Let’s see if he actually eats some for dinner tomorrow. This batch has kale, spinach and…

Vegan Eggplant Rollatini

October 24, 2009

The vegan eggplant rollatini is by far my favorite recipe. It is so good, and the cashew ricotta is so creamy it really makes the dish! Also, the key to cooking this eggplant healthily is baking it so you don’t have to use tons of oil to make it soft. It’s a little work so I usually don’t do it on a weeknight, but if I do make it I…
