Eat a Cantaloupe!

September 21, 2017

The other evening I was still hungry after dinner, and wanted a snack. I cut a cantaloupe in half, scraped out the seeds, put one side into a bowl, and grabbed a spoon. I just cut pieces with the spoon as I ate it, and it was delicious! I thought it looked cool, so I took a picture and posted it on Instagram and Facebook.  Then I got up, grabbed…

No-oil Chinese Eggplant

August 31, 2017

Everyone once and a while I have a really hunkering for Chinese food.  It’s one of those things that I grew up having on occasional Friday nights with my family, so sometimes I miss it.  I created this really quick, oil free dish that really hits the spot when I get one of those cravings!  The recipe can really be used with most any vegetables you have on hand, but…

Meatlessballs

July 11, 2017

Meatlessballs, are another crowd pleaser that you can proudly serve to anyone! Especially to friends and family who are transitioning, or even those who don’t (yet!) eat a plant based diet.  My family is used to getting together and celebrating over an italian feast, and for my Dad, that always included meatballs.  He went fully plant based earlier this year though, and I wanted to make him a replacement to…

Healthy Apple Pie

March 14, 2017

Yup, Apple pie!  Truly delicious, truly healthy, apple pie! The credit for this one goes to three people, Cathy Fischer for the crust, Dr. Fuhrman for the filling, and our friend Jenn for having the genius idea to put the two of them together.  I’m really glad she did too, because this is a great recipe that everyone will love.  The fact that it’s healthy is just a bonus! In fact,…

Stuffed Peppers

January 4, 2017

These stuffed peppers are easy to prepare, and so tasty!  I made them for Christmas Eve dinner this year and everyone loved them!  I prepared a double batch, and froze half after cooking to save for the following week.  We love having delicious leftovers in the freezer for a quick dinner, and our friends who came to dinner are still raving about them! 🙂 The filling calls for cooked brown rice.  Cooking the rice takes more…

Vegetable Stir Fry

November 7, 2016

We love this stir fry recipe in our house! It’s a fairly easy to make on a week night, and can really satisfy my craving for Thai take out.  The most time consuming part is chopping all of the vegetables, and it’s really not so bad…  The roasted cashews add a lot of flavor.  A LOT!  So don’t skip that step, it’s totally worth it, and really makes the dish.  Oh, and the…

Chickpea Potato Curry

April 7, 2016

My kids love going out for Indian food, but for some reason, never like my Indian inspired dishes at home.  I finally have a winner!  I realized I need to add potatoes (apparently, they love any dish with potatoes) and I need to blend my stewed tomotoes so there are no chunks.  My kids are not picky eaters by any means and will usually anything, so when one tells me…

Banana Buckwheat Flax Pancakes with Pecans

April 20, 2015

Yes, pancakes.  These fall more into the fruit and whole grains for breakfast category than veggies for dinner, but people have been asking about breakfast, especially for kids, and this puts a pretty good spin on the old classic.  Pancakes are typically problematic with the refined white flour, dairy, eggs, sugar, and additives and preservatives.  This version is pure whole, lightly refined, plant food, and they are delicious!   Banana…

Lentil Shepherd’s pie

January 1, 2015

Dr. Fuhrman emailed out this recipe in his newsletter and I was really excited to try it!  When the weather gets cold, I really enjoy really hot, comfort food and I think this recipe satisfies both while being totally plant based.  His recipe can be found here. Enjoy!  We loved this recipe and all four of us almost ate the entire thing for dinner one night!   Lentil Shepherd’s pie…

Cashew Hot Chocolate

December 8, 2014

My 10 year old and I were invited to a get together where hot chocolate was going to be served.  Since we try to eat as healthy as possible, avoiding all dairy, sugar, and processed foods, I’m not into giving him traditional hot chocolate…  I still wanted to go, so I was thrilled when I found this recipe!  I made a batch and brought it with us so he wouldn’t feel…
